Zucchini Kugel


Recipe provided by Jeanne Lash of the West Essex Chapter.

Ingredients:

3 cups of Zucchini Squash
2 Eggs
½ cups Matzoh Meal
1 tsp. Grated Onion *
1 tsp. Salt
1 tsp. Baking Powder
dash of Pepper

Directions:

Peel Zucchini and grate on a fine grater.

Drain off most of the water and add eggs and other ingredients. Mix well.

Pour into a well greased pudding dish and bake at 400 ° for about 35 minutes or until a brown crust has formed on top.

Serve hot.

* More onion may be used if a stronger flavor is desired.

Prep Time: About an hour.
