Nobody makes a noodle pudding as wonderful as this. Until the day Aunt Ruth shared the recipe, I did not know it was Kugel.
Aunt Ruth's Homemade Noodle Pudding
12 Servings
Ingredients:
1 | (8 oz.) package of egg noodles |
2 | eggs - beat well |
1/4 | cup sugar |
1 | (12 oz.) jar of apricot preserves |
1/2 | pt. of sour creme |
1/2 | cup of creamed cottage cheese |
1/2 | cup sun dried raisins |
1/4 | cup melted butter or margarine |
1/4 | teaspoon of vanilla |
Directions:
Cook the egg noodles according to the instructions on the package. Drain them. In a large bowl, combine the eggs and sugar. Add the noodles, preserves, sour cream, cottage cheese, raisins, and butter. Blend all ingredients well.
Put the combined mixture into a greased 2 quart oblong baking dish. Sprinkle the top with cinnamon.
Bake the pudding at 350 degrees until brown and crisp on top.
Notes:
This dish may be refrigerated and reheated as needed.
