Noodle Pudding Supreme
6 Servings
Ingredients:
½ | lb. Wide Noodles |
¼ | soften Butter |
½ | lb. Cottage Cheese |
2 | Eggs, Beaten light |
½ | cup Sugar |
½ | tsp. Cinnamon |
1 | tsp. Salt |
3 | tbs. Sour Cream |
2 | tbs. Seedless Raisins |
1 | tsp. Vanilla |
2 | tbs. Confectioner's Sugar |
Directions:
Cook noodles in deep saucepan of boiling salted water. Drain thoroughly.
Mix the butter and cottage cheese in a bowl with the noodles.
Add the eggs mixed with the sugar, cinnamon, salt and sour cream. Fold mixture into the noodles and cheese.
Add the raisins and vanilla - folding slowly.
Pour into a well buttered pan (8x8 in.)
Bake in a 350 degree oven until a light brown about 30 minutes.. Serve warm or cold with confectioner's sugar sprinkled over the top of with a favorite sauce.
