This is Aunt Ruths recipe for Matzo Stuffing.
Matzo Stuffing
Ingredients:
| 3 | tablespoons fat | 
| ½ | cup chopped celery | 
| ½ | cup chopped onion | 
| 3 | cup matzo farfel or 3 matzo broken | 
| ½ | cup water or chicken broth | 
| 1 | teaspoon salt | 
| ¼ | teaspoon pepper | 
| 1 | beaten egg | 
| 1 | tablespoon minced parsley | 
Directions:
Melt the fat in a frying pan until it bubbles. Add celery and onion and stir over medium heat for 5 minutes. Mix the farfel and water or broth and add it with the salt and pepper to the vegetables. Cook, stiring for a few minutes. Remove from heat, Stir in egg and minced parsley.
Cool before using to stuff a 5 pound chicken.
