Liver Knishes
12 Knishes
Ingredients:
| 2 | Med. Potatoes |
| 1 | Egg |
| 1 | Tbsp. dry bread crumbs |
| 2 | Tbsp. minced onion |
| 1 | Tbsp. Shortening |
| ¼ | tsp. Salt |
| ¼ | lb. Ground Cooked Liver |
| few grains pepper |
Directions:
Boil potatoes in jackets. Skin and mash. Add egg, bread crumbs and seasonings. Mix well.
Prepare Liver Mixture: Brown onion in shortening. Add with salt to liver. Mix well.
Dampen hands with cold water; then take mashed potato mixture the size of a large walnut and shape into ball. Place on well greased baking sheet. Bake in 375° oven for 20-25 minutes until bown. Fill center depressions in baked potato balls with 1 tsp. liver mixture. Serve hot.
